Salad with tomatoes, roasted red peppers and cheese.

This is the national dish and, for once, it’s vegetarian! A cold salad based on having high quality fresh ingredients. The only difficult thing to source was sirene, a Bulgarian cheese similar to feta; the best substitute I could find was a mild feta in brine.
Overall the salad was very nice. Best had with bread to soak up the remaining oil and vinegar.
